How to make Zobo drink

Zobo is a delightful drink that is made from dried zobo leaves (also known as roselle plant flowers).
Best enjoyed chilled, zobo can be consumed by everyone as it is non-alcoholic. In the same vein, it can also make a nice base for an alcoholic punch.
It's also a great drink that can be used for parties or consumed while enjoying a quiet afternoon at home.
  
That said, check out the recipe for 5 litres of zobo (that's 5 bottles of a 1 litre table water bottle).


What you need:
  • 2 De Rica cups of dry Zobo leaves
  • 1 glove of garlic
  • 1 big piece of ginger
  • 1 big very ripe pineapple
Directions:
  1. Wash all the dust off the dry Zobo leaves in cold water, to be sure you get rid of all the dust wash repeatedly. Don't worry about washing off the colour, it will still remain and show when it is boiled.
  2. Wash, peel and cut the pineapple into thin slices.
  3. Peel and cut the ginger and garlic into tiny pieces.
  4. Put the washed zobo leaves into a deep pot.
  5. Add the pineapples and pour enough water to cover the contents of the pot and then some.
  6. Start cooking at medium to high heat and let it boil for 5 minutes.
  7. Add the ginger and the garlic, and more water. Keep boiling for at least 30 minutes to soften the zobo leaves and pineapples.
  8. Turn off the heat and set aside to cool down completely.
  9. When cool, wringe out the juice from the pineapples and zobo leaves, leaving only the zobo juice in the pot.
  10. Pour the juice through a sieve to take out the remaining large particles then pour it through a clean chiffon cloth to remove the tiniest particles.
  11. Add any artificial flavours of your choice, including sugar, at this time and stir.
  12. Pour into bottles and refrigerate.
  13. Serve cold and you can garnish with cucumber of lemon slices.
